Ingredients
Ingredients for 4 to 5 people :
- 125 g butter
- 125 g flour
- 65 cl milk
- 150 g grated Gruyère cheese
- 6 eggs
- Salt and pepper
- Grated nutmeg
- 1 tablespoon truffle oil
Recipe
- Make a thick béchamel sauce with the butter, flour and milk. Add the grated Gruyère for the perfect creamy texture. Leave to cool for a perfect base.
- Gently fold in the egg yolks, then fold in the stiffly beaten egg whites for an unequalled lightness. Season generously with pepper, salt and nutmeg.
- Pour the mixture into a buttered dish and bake in a medium oven for 45 minutes. It’s ready!
Chef’s tip: just before serving, drizzle the truffle oil over the top for an irresistible touch of luxury and flavour. Serve quickly before the soufflé falls!
