Aunt Nana’s chilled tomato mousse recipe

Auntie Nana has prepared a refreshing little surprise for this scorching summer… A chilled tomato mousse, reinvented version of gazpacho, but this time in the form of a smooth mousse in which you can almost stick your spoon.


  • 3 ripe garden tomatoes
  • 1 clove of garlic
  • 1 teaspoon of honey (depending on your taste)
  • 1/2 boursin cheese
  • 1 tablespoon soy sauce (unsweetened)
  • 1 tablespoon herbes de Provence
  • Salt
  • Pepper
  • Basil (for decoration)


  • Blender


  1. Blend all ingredients until smooth
  2. Pour into small glasses or an individual bowl as a starter
  3. Decorate with a few basil leaves
  4. Place in the refrigerator for at least one hour before serving.
