Our pesto spread, originally a green sauce from Italy, is a real explosion of flavour in the mouth. Made with fresh basil leaves, creamy cashew nuts, aromatic garlic, grated Parmesan, velvety olive oil and a touch of lemon, it embodies the perfect balance between freshness and richness for a joyful aperitif. This quick and easy recipe will also add a touch of authenticity and indulgence to your favourite dishes. Let yourself be carried away by its bewitching flavour and creamy texture to enhance your pastas, pizzas, salads and much more.
Our recommendation: Try this delicious cheese on a slice of “bees and cicadas” bread as an aperitif.
Ingredients
Serves 2-3:
- 60g basil leaves
- 80g cashew nuts (or pine nuts)
- 2 large garlic cloves
- 70g grated Parmesan cheese
- 10 tbsp olive oil
- 1/2 lemon
- Salt & pepper
Hand chopper with string
Recipe
- Chop the basil leaves one by one in the string chopper, followed by the cashew nuts
- Place the 2 garlic cloves in the microwave for 10 seconds, a little trick to make them burst and peel them, easily removing the sprouts, then chop them
- In a bowl, add these three ingredients, the Parmesan, oil and lemon juice, and stir in, mashing with a spoon
Toast your slices of bread, cut into small squares and spread with a dab of pesto, then enjoy.
